Maruto Soy Sauce
Maruto Shoyu has carefully brewed soy sauce for generations using only locally sourced ingredients. Even after sadly closing its doors due to a shortage of raw materials in the post-war era, the beloved taste and spirit of the brand were preserved, and it was revived after approximately 70 years.
Today, it continues to be naturally brewed using domestically grown whole soybeans, wheat, and sun-dried salt, following traditional methods. By slowly and carefully crafting the soy sauce, embracing the microorganisms residing in the brewery and the power of nature, it achieves a complex aroma and mellow flavor.
A key characteristic of Maruto Shoyu is its commitment to using locally sourced ingredients from Nara. The main ingredients—soybeans, wheat, and salt—are primarily from Nara Prefecture or other domestic sources. Long-term maturation in wooden barrels draws out the natural umami and aroma.
Behind the brand is also the natural brewing method passed down through generations and the dedication of artisans to preserve that taste and connect it to future generations. Prioritizing quality over efficiency, Maruto Shoyu continues its local, community-rooted craftsmanship.
